The wine: Passerillage or the art of naturally drying grapes lasts four to five months. As the pinot gris and chardonnay grapes shrivel in straw lined crates, so their aromas develop and intensify to become the heart of our passerillé blend full of elegance and finesse and with the consistency of a liqueur: the pinot gris ensures a conspicuous presence of fruit, candied fruit even, whilst the chardonnay confers a welcome freshness. It’s an atmospheric wine for that special occasion which will as well accompany pâtés de fois gras as blue cheeses and desserts.
