The wine: Sourced from plants in a prime location this pinot noir is the most cosseted of our vines. To start with, the harvest is carefully limited. Next, from mid-August onwards, the foliage around the bunches is thinned out, the better to expose the grapes to the sun and so enhance their maturity and colour. Then, in mid-September, early pruning of the canes triggers an additional concentration of the aromas, sugars and colour. Finally, maturing in casks enables this pinot to show off its wonderful personality.
